Las Criollas de Don Graciano 2023 Schiava maybe in the backyardA clarete made from three traditional Criolla varieties grown in 60 year old pergola vineyards in the Uco Valley. The grapes are spontaneously fermented in concrete vats and old oak barrels, with 20% of the batches receiving two weeks of skin contact. The wine ages for three months on the lees before blending and bottling with coarse filtration and a small addition of sulfur.
