Where Cailleret is all linear precision, Chaumees tends to wear its aromatics on its sleeve more openly floral and perfumed, with anise, white blossom, and orchard fruit out front. Caroline Morey, who launched her own label in 2014 after her father's retirement, farms 45+ year old vines here and uses the same patient approach as her
